Caesar Vinaigrette

We had a Caesar salad for dinner tonight, with toasted garlic bread in place of croutons and some sauteed mushrooms on the side, just because I needed to use them up.  I make our Caesar vinaigrette and it’s egg and gluten free!  It does have anchovies in it, which real Caesar does, but don’t be scared, I think it tastes like Caesar dressing you get in restaurants.  Here’s the recipe.

Ingredients
  1. 2 cloves of garlic
  2. 2 anchovy fillets
  3. 2 teaspoons Dijon mustard (Annie's Organic is GF and allergy free)
  4. 1 teaspoon Worcestershire sauce (Lea and Perrins is GF)
  5. juice of 1 lemon
  6. Tabasco to taste (most flavors of Tabasco are GF, but not all -- I use the original here)
  7. fresh ground pepper
  8. 1/3 cup olive oil
Instructions
  1. Add garlic and anchovies to a food processor and blend.
  2. Add mustard, Worcestershire sauce, lemon juice, Tabasco, and pepper and blend again
  3. Add the olive oil gradually and blend to create an emulsion.
Notes
  1. Contains fish. Dairy, wheat, egg, soy, peanut, tree nut, shellfish, and gluten free.
