Gluten Free Meal Plan 3/1/2013

We had a busy week this week, and I can’t believe I’m already planning for next week’s meals.      

Lunch: Leftovers from last week
Dinner: Paella with mussels

 Jeremy has been craving paella so I tried to work that into our menu, but it takes a while to cook… definitely a weekend meal.  We eat mussels a lot around here, they are high in Omega-3s and my kids actually love them.  I buy frozen ones because it is hard to find good fresh ones in Colorado, but the only place I’ve been able to find plain mussels without a sauce is Wal-Mart.  Mussels are a very cheap, healthy, and sustainable seafood ($4.50/2lbs frozen at Wal-Mart).

Lunch: Pack lunch – hummus and carrots, peppers, celery, guacamole,  fruit, crackers
Dinner: Breakfast burritos (with scrambled tofu, potatoes or sweet potatoes, refried beans, spinach, and Frontera salsa)

Sunday we are meeting some friends at the science museum so I will probably end up packing us some food since we can’t eat much at their snack bar!  We have made breakfast burritos (with scrambled tofu in place of eggs) several times and frozen them.  They heat up well and are great for lunches when we don’t have leftovers.  I’m going to try to make a bunch on Sunday night to restock our freezer, and also have them for dinner.

Lunch: Leftover Paella with mussels
Dinner: Wilted Green tacos with avocado, beans, salsa, tomato (I use Mission corn tortillas, and Frontera Salsa)

Lunch: Leftover tacos
Dinner: Wild Rice Salad with Miso dressing (a Pinterest recipe, I have not tried before)

Lunch: Wild Rice Salad
Dinner: Quinoa and Black Bean Burger (a Pinterest recipe, I have not tried before)

Lunch: Leftover Burgers or Frozen Meals
Dinner:  Salad with roasted veggies

 Thursday night I’m doing my favorite easy salad.  I pretty much take all the leftover veggies from the week that we haven’t eaten and roast them in the oven, then I put them on top of salad.  Everyone usually likes this meal quite a bit!

Lunch: Leftovers
Dinner:  Roasted salmon with new potatoes, asparagus, and dill (a Pinterest recipe, I have not tried before)
